The Art of Omission: In the production of natural wines, corrective interventions are largely avoided. At the tasting, Stephan Bucher from Weinhandlung Haus Österreich invites curious as well as critical wine enthusiasts to exchange thoughts on Austrian natural wines.
In Austria, there are excellent wineries, mostly small, family-run businesses, that offer natural wines or are fully committed to their production. Behind these unusual creations are always individuals from Austria who are passionate about this style of winemaking. The winemakers work diligently, managing their vines biologically or biodynamically, and reject manipulative techniques in both the vineyard and the cellar.
However, natural wines can also be a challenge for the palate: they look different in the glass, smell different, and taste different. They often smell different from how they taste. Raw, unadulterated, lavish. Wild aroma blends – reminiscent of undergrowth, leaves, or sherry – surprise our palates accustomed to polished fruit aromas.
